Calculation basis: all moisture fractions in the following formulas are expressed on a wet basis.

Dry solids = prepared wet load × (1 − initial moisture fraction)
Final product mass = dry solids ÷ (1 − target final-moisture fraction)
Removable water = prepared wet load − final product mass

Example: 1,000 kg of prepared material at 80% initial moisture and 3% target final moisture contains 200 kg of dry solids. The calculated final mass is about 206 kg, so the process must remove about 794 kg of water. This is a sizing input—not a cycle-time promise.

2. Define the complete batch cycle

Include pre-freezing, loading, vacuum pull-down, primary drying, secondary drying, pressure release, unloading, defrosting, cleaning and preparation for the next batch. Monitoring research shows that endpoint behavior changes with the product, loading and cycle settings; chamber pressure alone is not enough to prove that the product center is dry.[3]

3. Validate thickness and loading density

A fruit slice, whole berry, meat cube and mango puree create different resistance to heat and water-vapor movement. Plant skins and waxy cuticles can slow drying, while high-sugar products introduce additional stability and collapse risks.[1] The buyer should request a test using the actual product form, thickness and target endpoint.

Why a universal drying-time promise is unreliable. Typical commercial food cycles often fall within an 8–15-hour drying window, while extracts, thick layers, whole fruits and temperature-sensitive products can require longer. In one laboratory study, a 15 mm layer of Philippine Carabao mango puree required about 31 hours under that study’s specific equipment and settings.[5] The result does not predict a commercial sliced-mango cycle; it shows why every cycle statement should identify the product, thickness, loading, equipment and endpoint.
